Instructions

  1. Preheat oven to 350°F.
  2. Pat the chicken breasts dry with paper towels and season with salt and pepper.
  3. In a shallow dish, mix together the flour, salt, and pepper.
  4. In another shallow dish, mix together the breadcrumbs and grated parmesan cheese.
  5. In a third shallow dish, beat the eggs.
  6. Dip each chicken breast into the flour mixture, then into the beaten eggs, and finally into the breadcrumb mixture. Press the breadcrumbs onto the chicken to make sure they stick.
  7. In a large frying pan, heat the olive oil over medium-high heat. Once hot, add the chicken and fry until golden brown on both sides, about 3 minutes per side.
  8. Transfer the chicken to a baking dish and spoon the tomato sauce over the top of each chicken breast.
  9. Sprinkle the grated mozzarella cheese over the top of the tomato sauce.
  10. Bake uncovered for 25-30 minutes, or until the cheese is melted and bubbly.
