Ingredients:
- 4 large boneless, skinless chicken breasts
- 1 cup Italian-seasoned breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1/2 tsp salt
- 4 slices of mozzarella cheese
- 1 cup marinara sauce
- Fresh parsley, chopped
- 1 Tbsp olive oil
Instructions:
- Preheat your oven to 400°F (204°C).
- Trim any excess fat or gristle from the chicken breasts and pound them to an even thickness of about 1/2 inch.
- Combine the breadcrumbs, grated Parmesan cheese, garlic powder, and salt to make the breading.
- Sprinkle a tablespoon of the breadcrumb mixture on each of the chicken breasts, making sure to cover it evenly.
- Top each breast with a slice of mozzarella cheese.
- Carefully roll the chicken up from one end to the other, encasing the cheese and seal it at the seam with toothpicks.
- Heat the olive oil in a large oven-safe skillet over medium-high heat.
- Add the chicken rolls to the skillet and sear on all sides until they are golden brown (about 6-8 minutes).
- Pour the marinara sauce over the top of the chicken rolls and sprinkle with some chopped parsley.
- Bake in the preheated oven until it reaches an internal temperature of 165°F (74°C), which will be about 20-25 minutes.
- Remove the skillet from the oven and allow it to cool slightly. Once the chicken has cooled, remove the toothpicks and slice the roll-ups into sections using a sharp knife.
- Arrange the sections on a platter and serve while still hot.
For the Sauce:
- 1 can (28 oz.) Italian-style diced tomatoes, undrained
- 1/4 cup reduced-sodium chicken broth
- 2 garlic cloves, minced
- A pinch of salt and black pepper
Instructions:
- In a blender, blend the tomatoes, chicken broth, garlic, salt, and pepper until smooth.
- Transfer the tomato mixture to a saucepan and cook over medium heat, stirring occasionally, until heated through.
- When serving, place a small amount of the sauce in the bottom of the plate, then add the chicken roll-ups on top.
