Baked Chicken Parmesan

Ingredients
- 4 boneless, skinless chicken breasts
- 1/2 cup whole wheat bread crumbs
- 1/4 cup grated Parmesan cheese
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup milk
- 1/4 cup marinara sauce
- 1/4 cup shredded mozzarella cheese
Instructions
- Preheat the oven to 375°F.
- In a small bowl, mix together the bread crumbs, Parmesan, basil, oregano, garlic powder, salt, and pepper. Place in a shallow dish.
- Pour the milk into another shallow dish.
- Dip each chicken breast in milk, then in the bread crumb mixture, coating well.
- Place the chicken on a baking sheet that has been sprayed with cooking spray.
- Bake for 25 minutes.
- Remove from the oven and top each chicken breast with 1 tablespoon marinara sauce and 1 tablespoon shredded mozzarella cheese.
- Return to the oven and bake for an additional 10 minutes or until the cheese is melted and bubbly.
Lightened Chicken Parmesan

Ingredients
- 1 pound chicken breast cutlets
- 1/2 cup whole wheat Panko bread crumbs
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup milk
- 1/4 cup egg substitute
- 1 cup marinara sauce
- 1/2 cup shredded part-skim mozzarella cheese
- Fresh parsley, chopped, for garnish
Instructions
- Preheat the oven to 425°F.
- In a small bowl, mix together the bread crumbs, Parmesan, garlic powder, salt, and pepper. Place in a shallow dish.
- Pour the milk and egg substitute into another shallow dish.
- Dip each chicken cutlet in the milk mixture, then in the bread crumb mixture, coating well.
- Place the chicken on a baking sheet that has been sprayed with cooking spray.
- Bake for 15 minutes or until the chicken is cooked through.
- Remove from the oven and top each chicken cutlet with 1/4 cup marinara sauce and 2 tablespoons shredded mozzarella cheese.
- Return to the oven and bake for an additional 5 minutes or until the cheese is melted and bubbly.
- Garnish with parsley and serve.
Panko Chicken Parmesan

Ingredients
- 4 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 egg
- 1/2 cup Panko bread crumbs
- 1/4 cup grated Parmesan cheese
- 1/2 cup marinara sauce
- 1/2 cup shredded mozzarella cheese
- Chopped fresh parsley, for garnish
Instructions
- Preheat the oven to 350°F.
- In a shallow dish, mix together the flour, garlic powder, salt, and pepper.
- Beat the egg in another shallow dish.
- In a third shallow dish, mix together the Panko bread crumbs and Parmesan cheese.
- Dredge the chicken in the flour mixture, shaking off any excess, then dip in the egg mixture, and finally coat in the Panko mixture, pressing the crumbs onto the chicken to adhere.
- Heat a large skillet over medium-high heat.
- Add the chicken and cook for 3 to 4 minutes per side or until browned.
- Transfer the chicken to a baking sheet that has been sprayed with cooking spray.
- Top each chicken breast with 2 tablespoons marinara sauce and 2 tablespoons shredded mozzarella cheese.
- Bake for 10 to 15 minutes or until the cheese is melted and bubbly.
- Garnish with parsley and serve.
Healthy Chicken Parmesan

Ingredients
- 2 cups whole-wheat spaghetti
- 1 pound boneless, skinless chicken breasts, pounded thin
- 1/2 cup whole wheat bread crumbs
- 2 tablespoons grated Parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 egg white, beaten
- Olive oil cooking spray
- 1 cup marinara sauce
- 1 cup shredded part-skim mozzarella cheese
- 1/4 cup chopped fresh parsley, for garnish
Instructions
- Preheat the oven to 350°F and cook the spaghetti according to the package directions.
- Combine the bread crumbs, Parmesan cheese, garlic powder, salt, and pepper in a shallow dish.
- In another shallow dish, beat the egg white.

- 1/2 cup marinara sauce
- 1/2 cup shredded part-skim mozzarella cheese
- 2 tablespoons chopped fresh basil
Instructions
- In a shallow dish, mix together the bread crumbs, Parmesan cheese, garlic powder, salt, and pepper.
- In another shallow dish, beat the egg white.
- Coat each chicken breast in the egg white, shaking off any excess, and then coat in the bread crumb mixture.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the chicken and cook for 3 to 4 minutes per side or until browned and cooked through.
- Top each chicken breast with 2 tablespoons marinara sauce and 2 tablespoons shredded mozzarella cheese.
- Cover the skillet and cook for an additional 1 to 2 minutes or until the cheese is melted and bubbly.
