Chicken Parmesan Zucchini Boats
Ingredients:
- 4 medium zucchini
- 1 lb. ground chicken
- 1/2 cup grated parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 cup marinara sauce
- Salt and pepper to taste
Instructions:
- Preheat oven to 375 degrees F.
- Trim the ends off the zucchini and slice them in half lengthwise.
- Use a spoon to scoop out the inside of each zucchini half, leaving about 1/4 inch of flesh on each side.
- Chop up the zucchini flesh and set aside.
- In a large skillet, heat the olive oil over medium-high heat.
- Add the onion and garlic and cook for 2-3 minutes, until fragrant.
- Add the ground chicken and cook for 5-7 minutes, until browned and cooked through.

- Add the chopped zucchini flesh and cook for another 2-3 minutes.
- Remove from heat and stir in the parmesan cheese and parsley.
- Spoon the chicken mixture into each zucchini half.
- Top each zucchini boat with a spoonful of marinara sauce.

- Bake for 30-35 minutes, until the cheese is melted and bubbly and the zucchini is tender.
